Cranberry Bread

Raw Cranberries 1.5 cups
Orange Rind 1.5 Tbsp
Sugar 1.5 cups + 3 Tbsp
Flour 3 cups
Baking Powder 3 tsp
Baking Soda 0.5 tsp
Salt 0.75 tsp
Nutmeg 0.5 tsp
Eggs 2
Orange Juice Concentrate 0.75 cups
Water 1.25 cups
Chopped Pecans 1 cup


Coarsely chop raw cranberries and grate orange rind. Combine with 3 Tbsp sugar and set aside.

Sift together flour, baking powder, baking soda, salt, nutmeg, 1.5 cups sugar.

Whip together eggs, orange juice concentrate, water.

Mix all ingredients together until blended - do not overbeat.

Bake in a bread pan at 350 degrees for approx. 1.5 hours or until a knife comes out clean.
